Substituted benzoic acid compounds of formula (I) or their salts or mixtures are new. either R1 : H or methyl; or R2 : organic residue with 5C or one oxygen atom or none; or R3 : organic residue with 10C or one or more oxygen atoms; or R1+R2+C : 5C and one oxygen atom or none; or R3 : organic residue with 10C and one or more oxygen atoms. Independent claims are included for: (1) a mixture, comprising (I), and a hydroxyflavone compound of formula (II); and (2) preparation, preferably a food or enjoyment preparation, a pharmaceutical preparation, a cosmetic preparation or a dermatological preparation, comprising (I). Q1-Q9 : H, hydroxy, methyl, ethyl, 1-propyl, methoxy, ethoxy, 1-propyloxy or 2-propyloxy, with the proviso that at least one of the residues Q1-Q9 represents a hydroxy group; Q2, Q4, Q5, Q8, Q9 : H; Q1, Q3-Q6 : H, hydroxy or methoxy, with the proviso that at least one of the residues Q1, Q3 represents a hydroxy; and Q7 : hydroxy.
