PROBLEM TO BE SOLVED: To provide a method for producing fermented food using Lactobaccilus which is able to improve the preservative survival property of Bifidobacterium bacillus in the fermented food obtained by making milky raw materials ferment.SOLUTION: In a production method for fermented food comprising making milky raw materials ferment by using Lactococcus lactis and Bifidobacterium bacillus, Lactococcus lactis subspecies lactis MCC1723 (NITE BP-1204) and/or Lactococcus lactis subspecies lactis MCC1764 (NITE BP-1205) are used as the Lactococcus lactis. |
