PROBLEM TO BE SOLVED: To provide a caramel-containing heat-sterilized food such as curry sauce in which beef does not cause black discoloration even if being in a long-term storage, as for a heat-sterilized food such as a retort pouch food including curry sauce.SOLUTION: A caramel-containing heat-sterilized food contains emulsion caramel and protein-containing ingredients. Black discoloration of the protein-containing ingredients can be prevented from in the heat-sterilized food that contains caramel and the protein-containing ingredients stored for a long time.
