PURPOSE: A producing method of black garlic capable of uniformly produce the black garlic is provided to prevent the loss of nutrients from fresh garlic, and to remove the spicy taste of the garlic. CONSTITUTION: A producing method of black garlic comprises the following step: removing foreign materials from fresh garlic(S100); inserting the garlic with zeolite into an aging container, and firstly aging the mixture at 55-85 deg. C(S110); and secondly aging the mixture at 35-45 deg. C. The zeolite is located around the garlic without directly contacting the garlic(S120).
