PROBLEM TO BE SOLVED: To provide a production method and a production apparatus of a dairy product, which hardly give an impact or vibration to a coagulum when discharging whey.SOLUTION: A production method of a dairy product includes: a temperature control process for controlling the temperature of a thing, obtained by retaining sterilized milk in a liquid-impermeable flexible sheet material 23, to be a given temperature from 30°C or more and less than 60°C; a charging process for charging rennet to the milk in the sheet material 23 made to have a given temperature; a cutting process for cutting a coagulum generated after the charging process; a temperature maintaining process for maintaining the content of the sheet material 23 after the cutting process to be 60°C or higher for a given time; and a separation process for separating the whey from the coagulum by emptying the accommodated thing of the sheet material 23 into an inner container 21 after the temperature maintaining process. |
