PURPOSE: Functional noodles containing a perilla leaf extract, and a producing method thereof are provided to remove the unique bad smell of perilla leaves by parboiling. CONSTITUTION: A producing method of functional noodles containing a perilla leaf extract comprises the following steps: mixing perilla leaves with water in a ratio of 2-4:6-8(w:v), and homogenizing the mixture for 25-35 seconds to obtain perilla leaf homogenate; and adding 36-38%(w/w) of perilla leaf homogenate into a mixture of flour and salt to obtain dough for producing the noodles. The perilla leaves are parboiled for 7-9 minutes. The flour, the perilla leaf homogenate, and the salt are mixed in a ratio of 45-55:25-35:1-2.
