FIELD: chemistry.SUBSTANCE: cinnamon is mixed with 70 vol. % water-alcohol liquid in ratio of 1:1 and infused for 5 days; the infusion is drained; black tea is added followed by addition of 50 vol. % water-alcohol liquid in an amount equal to the discharged amount and infusion for 5 days; the infusion is drained and then mixed with the first infusion. A blend of said infusions, fruit infusions prepared from black chokeberry and mountain ashes, colourant, vanillin (1:100) and water-alcohol liquid from a mixture of rectified ethyl alcohol and corrected drinking water is prepared. The blend is stirred for 15-20 minutes, filtered and aged for 30-40 minutes. To obtain 1000 decalitres of a 50 vol. % bitter infusion, the following ingredients are used, in kg: black chokeberry - 50-70, mountain ash - 110-135, cinnamon - 3-10, black tea - 3-5, vanillin 0.02-0.06, colourant - 70-110, water-alcohol liquid - the balance.EFFECT: invention provides faster anabolic reaction of the aromatic complex, improved organoleptic properties of the finished product, the bitter infusion acquires a subtle taste and aroma of rum with a puckery taste.2 cl, 2 ex |
