PROBLEM TO BE SOLVED: To provide a xanthine oxidase inhibitor capable of being extracted from thyme of spice by a simple method.SOLUTION: Luteolin-3'-&bgr;-D-glucuronide having a recognized xanthine oxidase-inhibiting activity is contained in a hot water extract obtained by immersing a dry powder of thyme in water and extracting it in a 100°C constant temperature bath over night. Since the xanthine oxidase inhibitor can be extracted from the thyme with water as a solvent, the solvent can easily be handled and can reduce the cost of extraction.
