Use of oil preparation as a substitute of palm oil in food substances, is claimed, where the oil preparation comprises vegetable oil or a blend of vegetable oils without including a palm oil and ingredients consisting of oligosaccharides, polysaccharides and non-emulsifiers derived from palm oil and in which palmitic acid is present in an amount of less than 12 wt.%, preferably 5 wt.%.
