PROBLEM TO BE SOLVED: To provide a ι- (iota-) or &kgr;- (kappa-)carrageenan composition with reduced gelling cations.SOLUTION: A process comprises the steps of: extracting a carrageenan starting material with an aqueous treatment solution to form a ι-carrageenan extract; and contacting the carrageenan extract with an acidic cationic ion-exchange material and reducing the cation content of the ι-carrageenan extract to produce a first ion-exchanged carrageenan extract; and mixing the first ion-exchanged carrageenan extract with a second ion-exchanged carrageenan extract, wherein the second ion-exchanged carrageenan extract is a ι- or &kgr;-carrageenan extract and is obtained by conducting a treatment with the acidic cationic ion-exchange material. |
