<P>PROBLEM TO BE SOLVED: To provide a calcium preparation for breads to which calcium carbonate is added without causing reduction in volume of breads and reduction in flavor and texture, and to provide a calcium enriched bread dough to which calcium carbonate is added. <P>SOLUTION: The calcium preparation for breads is added to breads, and is obtained by mixing calcium carbonate with 10-30 wt.% of malt extract. The calcium enriched bread dough contains calcium carbonate and malt extract and the amount of the malt extract is 10-30 wt.% based on the total amount of calcium carbonate and malt extract. <P>COPYRIGHT: (C)2011,JPO&INPIT |
