PURPOSE: A Saccharophagus sp.-derived beta-agarase with an ability of decomposing agar at high temperature is provided to ensure thermal resistance and to control decomposition activity using metal ion. CONSTITUTION: A beta-agarase has an amino acid sequence of sequence number 5. The beta-agarase ha an amino acid sequence encoded by a polynucleotide of sequence number 4. A vector has a base sequence of sequence number 4. The vector is used for obtaining a transformant. |
