摘要 PURPOSE: A method for manufacturing ice watermelon wine is provided to obtain a watermelon concentrate liquid of high sugar content using watermelon of low sugar content and to promote domestic fruit consumption, thereby increasing farm income. CONSTITUTION: A method for manufacturing ice watermelon wine comprises the steps of: removing watermelon rind, crushing and freeze-drying watermelon under a vacuum condition at ultra-high speed, and sublimating; adding water to prepared watermelon and adjusting sugar content to 25-35 degrees brix; adding K_2S_2O_5; inoculating yeast; fermenting in a thermostatic incubator at 15-25 °C for 5-12 days; removing seeds, fibers, and yeast residues from the fermented watermelon liquid and adding K_2S_2O_5; and maturing and filtering the fermented watermelon liquid.
