PROBLEM TO BE SOLVED: To provide rice cracker with a strong flavor of squid.SOLUTION: A specific amount of ingredients of cubic rice crackers made of a mixture of 15-20% of granular squid having sides of approximately 5 mm, 5-10% of wheat flour, and 70-80% of mixed cubic rice cracker dough is put in a heated concave metal mold of a squid shape, and then pressed by an also heated convex metal mold. Then the convex mold is raised drastically to produce puffed rice cracker of squid shape, on which soy sauce based broth liquid (40-50% of soy sauce, 30-35% of sugar, 20-25% of sweet cooking rice wine) is sprayed and baked. |
