A durable pastry and a fine pastry containing a spice and/or spice mixture, the spice being fennel or anis or clove, or a mixture of at least two of these spices, wherein the spice content is from 0.9 to 1.1 g based on 100 g of raw materials, and the spice being intended for lowering the acrylamide content. A spice mixture for the durable pastry and the fine pastry, comprising at least two spices from the group of fennel, anis, and cloves, wherein the content of these spices in the spice mixture is 14 to 100 wt. % and the mixture being intended for lowering the acrylamide content in durable pastry and fine pastry. |
