PROBLEM TO BE SOLVED: To provide a protein solution capable of stably maintaining the enzymatic activity of a low temperature-optimum protease for a long period by preventing reduction of the enzymatic activity of the low temperature-optimum protease and improving heat resistance thereof.SOLUTION: There is provided a protein solution (D) containing a low temperature-optimum protease (A), a protease activity inhibitor (B) and a solvent (C), wherein the optimum temperature of the enzymatic reaction of the component (A) is 0-50°C. The protease activity inhibitor (B) is obtained by using one of benzyloxycarbonylphenylalanine nitroanilide, benzoylarginine nitroanilide, furylacryloylglycylleucine amide and succinylalanylalanylprolylphenylalanine nitroanilide as a substrate (E), and has an inhibitory constant Ki of from 1 pM to 10 μM against the component (A) obtained by a Henderson plot under a condition of the optimum temperature, optimum pH and optimum substrate concentration for the activity of the low temperature-optimum protease (A). |
