A process for production of poly (alpha 1,3 glucan) from a renewable feedstock, for applications in fibers, films, and pulps. The effect of addition of tetraborate in increasing the yield of the desired end products, poly (alpha 1,3 glucan) and fructose, and decreasing formation of the undesired by-product leucrose.
