PROBLEM TO BE SOLVED: To provide a breader-mix for a deep-fried food, giving a crunchy mouthfeel when used for cooking a deep-fried food, capable of maintaining the mouthfeel for a long time, and being less liable to deterioration by thawing.SOLUTION: Provided is a breader-mix for a deep-fried food, containing 5-60 mass% glutinous rice powder wet heat-treated for 5-60 minutes in the range of 70-130°C under a normal pressure.
