PURPOSE: Black jujube and a production method thereof are provided to age dried jujube for the specified period of time for improving functionality of the jujube. CONSTITUTION: A production method for black jujube comprises the following steps: first-round aging of jujube fruit in a thermo-hygrostat at 40 deg C with a relative humidity of 90-95% for 20-30 hours; second-round aging of the jujube fruit in the thermo-hygrostat at 60 deg C with a relative humidity of 80-90% for 40-50 hours; third-round aging of the jujube fruit in the thermo-hygrostat at 40 deg C with a relative humidity of 60-80% for 20-30 hours; and fourth-round aging of the obtained black jujube at 25 deg C for 20-30 hours before finally drying the jujube. |
