PURPOSE: A method of manufacturingγ- glycine using water / oleic acid emulsion is provided to by manufacturing the crystal form particle the water / oleic acid emulsion after doing formation the hydrocarbon, and the harmfulness retention such as surfactant and acidity control are nonexistent andγ- glycine which may not be harmful to the human body can be manufactured. CONSTITUTION: A manufacturing method ofγ- glycine comprises the following steps. The oleic acid is added in the glycine aqueous solution and the water / oleic acid emulsion is formed and it crystallizes. The water / oleic acid emulsion may not include hydrocarbon, and the additional material of the surfactant or the acidity control. The water / oleic acid emulsion is the w / o type or the o / w type emulsion. The oleic acid is 30 - 100 wt% of the whole content.
