PROBLEM TO BE SOLVED: To provide a rearing method of cattle capable of decreasing an isoflavone concentration in beef.SOLUTION: Provided is a rearing method of cattle that is characterized by pasturing cattle in a pasturing area of 0.3-10 are/head and rearing the cattle by roughage feeding for at least 3 months before shipment. The cattle's intake of isoflavone is reduced as a result of roughage feeding and pasturing, and the isoflavon is decomposed since the cattle's catabolization is promoted. This is more effective for a drop of isoflavon level in beef. It is desirable that the cattle is Japanese Shorthorn or its crossbred cattle. |
