Conveyor dishwasher with drying system and method for operating such a conveyor dishwasher

The dishwasher (50) has a conveyor belt (58) for transporting rinsing goods between prewashing and clear rinsing zones (51, 54). An exhaust system (80) discharges exhaust air from the zones, and attached to a drying device for withdrawing moisture from the exhaust air. The drying device has a sorption unit (73) with reversibly dehydrogenatable drying material i.e. zeolite. The system has an exhaust fan (70), and a heat exchanger (81) is arranged at a suction-sided inlet of the fan, where capacity of the fan is controlled based on the amount of air exhausted from the dishwasher per time unit. An independent claim is also included for a method for operating transportation dishwasher.
