<p><P>PROBLEM TO BE SOLVED: To provide an antifungal substance which is safe and has an antifungal activity in neutrality, a fungus producing the antifungal substance, and a growth inhibiting method of fungi and/or yeasts using them. <P>SOLUTION: This antifungal substance is produced from a yeast selected from a group consisting of the genera Candida, Saccharomyces, Pichia, Rhodotorula, Clavispora and Torulaspora and inhibits the germination of a spore, and it has following characteristics; (1) it has antifungal activity at pH 7.0, (2) a culture solution of which the yeast is cultivated in a 10% (w/w) skimmed milk culture medium has antifungal activity, (3) it is kept on the surface of an ultrafilter membrane when the supernatant liquid of the culture solution of which the yeast is cultivated in a 10% (w/w) skimmed milk culture medium and ultrafiltered using an ultrafilter membrane having an MWCO (Molecular Weight Cut Off) of 10 kD. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
