The device has a measurement head (1) including a temperature sensor (2) and connected to a cable (3) that is driven to allow the head to pass from a position in which the head is placed outside a low-temperature liquefied gas tank to another position in which the head is placed inside the tank at height of over-filling threshold (LSHH). A guide tube (4) guides the measurement head between the positions. The guide tube is plunged into the tank from outside the tank and terminated in a low part by a pierced cap (5) to allow input of gas from the tank during over-filling. An independent claim is also included for a method for detecting over-filling of a low-temperature liquefied gas tank.
