The present invention relates to the use of avocado pit for obtaining an avocado oil enriched with alkyl polyols and/or with acetylated derivatives thereof, wherein said avocado pit represents 10% to 50% by weight relative to the total weight of avocados used. The invention also relates to a process for obtaining an avocado oil enriched with alkyl polyols or with acetylated derivatives thereof, from at least avocado pits, wherein said avocado pits represent 10% to 50% by weight relative to the total weight of avocados used. The invention also relates to an avocado oil enriched with alkyl polyols and/or with acetylated derivatives thereof, which can be obtained by means of this process. The invention also relates to the use of the avocado oil for preparing an avocado oil concentrate enriched with alkyl polyols and/or acetylated derivatives thereof, or for preparing an avocado unsaponifiable material enriched with alkyl polyols.
