PROBLEM TO BE SOLVED: To provide a method and an apparatus for producing frozen dessert containing thin layer sauce that can form a laminar pattern with a thin layer-like sauce dough layer and a frozen dessert dough layer inside the frozen dessert not only with chocolate but also with a viscous material under freezing such as fruit sauce.SOLUTION: Production of frozen dessert containing thin layer sauce that can form the laminar pattern with the thin layer-like sauce dough layer and the frozen dessert dough layer inside the frozen dessert is achieved by the method for producing frozen dessert containing thin layer sauce including the following processes: (1) disposing a composite nozzle provided with a sauce dough nozzle, at the peripheral edge of a frozen dessert dough nozzle, and ejecting frozen dessert dough from the frozen dessert dough nozzle and sauce dough from the sauce dough nozzle respectively to form composite dough with the sauce dough covering the outer periphery of the frozen dessert dough, (2) reciprocatively reversing the composite nozzle by 120-180° with the center part of an ejection port of the frozen dessert dough nozzle as a center axis to drop the composite dough in wave shape, and (3) laminating and storing the composite dough so as to be folded by the wavy dropping in a container disposed downstream of the composite nozzle. |
