PROBLEM TO BE SOLVED: To provide a method for producing edible meat in which edible meat having odd taste and/or odd smell is used as raw material meat if it is used for food as it is or after normal cooking and the odd taste and/or the odd smell are reduced.SOLUTION: There is provided the method for producing animal-derived edible meat having suppressed odd taste and/or odd smell, which includes a meat processing step of arranging the animal-derived raw material meat in an alternating electric field. The meat processing step may be performed in a state of immersing the raw material meat in water. In addition, the meat processing step may be performed by using an electrode contacting the water in which the raw material meat is immersed and a voltage generator for applying AC voltage to the electrode.
