THE EXTRACTING METHOD OF DUCK FEET GELATIN BY HEAT TREATMENT METHOD

PURPOSE: A sampling method of duck foot gelatin is provided to have duck foot gelatin capable of using in various fields according to the quality characteristic. CONSTITUTION: A fat and a foreign substance which is visible to the naked eye are removed and cleaned from a duck foot. A washed duck foot is soaked in the pH1- pH13 of soaking solution which is fivefold weight (v/w) in comparison with of duck foot; expended at a temperature of 15-20°C for 20-30 hours. A swollen duck foot is washed in flowing water and neutralized to the pH5-pH7. A duck foot gelatin is extracted by using a neutralized duck foot through heat processing method. An extracted duck foot gelatin is filtered and coagulated. A fat layer which is in the upper layer of the coagulated duck foot gelatin is removed. The soaking solution is forming a range of the pH1-13 by using 0.1N hydrochloric acid and 40% of sodium hydroxide solution.
