PURPOSE: A producing method of helianthus tuberosus snack containing abundant amount of inulin is provided to cook the snack without using cooking oil. CONSTITUTION: A producing method of helianthus tuberosus snack containing abundant amount of inulin comprises the following steps: cutting washed helianthus tuberosus in the thickness of 0.1-1cm; emitting microwaves having the oscillating frequency of 2,450MHz, and the high frequency output of 900W to the cut helianthus tuberosus for 5-180 minutes for deactivating enzymes contained in the helianthus tuberosus; and cooking the pre-processed helianthus tuberosus at 30-100 deg C for 5-300 minutes using hot air. |
