PURPOSE: A producing method of sikhye is provided to maintain effective components of germinated brown rice by crushing the germinated brown rice without polishing before fermenting. CONSTITUTION: An organic rice plant is germinated. The germinated brown rice with 3-5 mm buds (2) is ventilated and dried in the shade. The dried germinated brown rice is compress-crushed entirely including rice hull skins. Malt powder, fresh water, and sugar are added, and the mixture is aged in an aging tank repeatedly for 5 hours at 50°C, 3 hours at 40°C, 5 hours at 60°C, 5 hours at 40°C, and 5 hours at 60°C for 80 hours total. |
