PURPOSE: Yogurt including mulberry, and a producing method thereof are provided to offer the excellent taste and nutrition of the mulberry to the yogurt. CONSTITUTION: A producing method of yogurt including mulberry comprises the following steps: preparing a dairy ingredient base, and sterilizing and cooling the dairy ingredient base; injecting 2%(V/V) of lactic acid bacteria into the cooled dairy ingredient base, and fermenting the mixture for 12 hours at 40 deg C to obtain a yogurt base; and mixing the yogurt base with 1wt% of mulberry extracts, and stirring. The lactic acid bacteria are streptococcus thermophilus, lactobacillus acidophilus, and lactobacillus bulgaricus. |
