PURPOSE: A method of increasing functional polysaccharide in barley is provided to ferment barley in an optimum condition after preprocessing the barley. CONSTITUTION: Barley is pre-processed at 180-250 deg. C. The preprocessed barley is fermented after adding yeast. The pre-processing is compressing and drying barley. The yeast is Aureobasidium pullulans. The fermentation is conducted in a medium containing a carbon source and a nitrogen source. The carbon source is glucose or maltose.
