PROBLEM TO BE SOLVED: To provide noodles shortened in a boiling time and easy to cool in a cooling step owing to noodle ribbon having a star-shaped section, and entangled with broth to retain broth palatability owing to having grooves.SOLUTION: The noodles 10 with grooves are such that the noodles with grooves, formed with a plurality of grooves 12 along the noodle ribbon direction include a nearly circular core area in the central part in the cross section of the noodle ribbon, and the grooves each have a sectional form of extending, having a valley-shaped form from the outer peripheral part of the core area to a surface of the noodle ribbon, centering on the star-shaped core area. The grooves extend to the tangent line direction of the outer peripheral part of the core area in the noodle ribbon cross section, and the noodle ribbon has a nearly star-shaped main external form in the cross section. The grooves have 10-30% grooves to the diameter of the noodle ribbon, and have either number of grooves among 4-8 grooves arranged each other at a nearly equal interval. |
