摘要 PURPOSE: A functional scorched rice manufacturing method is provided to increase metabolism of a human body. CONSTITUTION: Rice is boiled as a mixture of white rice, glutinous rice, and brown rice at a weight ratio of 7:2:1. The rice is dried to have a water content of 10 to 20%. A functional composition is evenly spread on the dried rice, and both surfaces of the rice are baked to prepare scorched rice. The scorched rice is dried and pulverized so that the scorched rice is in a powder state. The powder state of scorched rice is molded into a form of an instant food. The functional composition comprises 0.5 to 10 parts by weight of licorice powder, 0.5 to 20 parts by weight of beta-glucan powder, 0.1 to 10 parts by weight of green tea powder, and 0.1 to 10 parts by weight of sealwort powder based on 100 parts by weight of a hovenia dulcis extract. The hovenia dulcis extract contains 0.1 to 0.5 mg/mL of a solid as a non-pulverized part of a mixture including hovenia dulcis branches, berries, and leaves is hot-water extracted and filtered.
