PROBLEM TO BE SOLVED: To provide a powdered flavoring preparation containing high-concentration menthol, with high storage stability despite containing menthol in high concentration, enabling the menthol's flavor to be expressed swiftly, and sustainable in flavor.SOLUTION: The powdered flavoring preparation is obtained by the following process: 20-45 mass% of menthol is admixed with an emulsifier comprising (1) 0.5-50 mass% of lecithin and/or an organic acid monoglyceride, (2) 0.5-50 mass% of a triglyceride and (3) 10-100 mass% of gum ghatti, and an excipient, and the resultant solution is subjected to emulsification treatment followed by evaporation to dryness. |
