PURPOSE: A method for preparing a yeast mutant and a method for enhancing yeast growth at low temperature are provided to stably grow the mutant and to be applied to foods, medicine, feed, and cosmetic products. CONSTITUTION: A method for enhancing yeast growth at low temperature comprises a step of inactivating SRO9 gene by substitution, insertion, or deletion of a nucleotide sequence encoding SRO9 protein or combination thereof. The yeast is saccharomyces. A method for preparing the yeast mutant comprises a step of inactivating SRO9 gene. A method for inactivating SRO9 gene comprises the substitution, insertion, or deletion of the nucleotide sequence or combination thereof. |
