PROBLEM TO BE SOLVED: To provide a lactic-acid fermented flavor liquid in which flavor is enhanced and an aroma component and a taste component are included in a good balance, and to provide a method for producing a new lactic-acid fermented flavor liquid that can stably produce the lactic-acid fermented flavor liquid having the characteristics.SOLUTION: The method for producing a lactic-acid fermented flavor liquid includes: the first lactic-acid fermentation step of fermenting a mixed liquid containing a dairy raw material; and the second lactic acid fermentation step of adding a phospholipid to carry out the lactic acid fermentation, thereafter. The lactic-acid fermented flavor liquid is obtained by the production method. |
