PURPOSE: A producing method of fermented soybeans including bamboo shoots is provided to improve the functionality of the fermented soybeans, and to reduce the bad smell. CONSTITUTION: A producing method of fermented soybeans including bamboo shoots comprises the following step: preparing bamboo shoot powder; steaming soybeans; mixing the steamed soybeans and the bamboo shoot powder in a weight ratio of 7-8:3-2; injecting Bacillus subtilis into the mixture for fermenting; and adding 3-7 parts of bamboo vinegar or bamboo sap by weight to 100 parts of fermented soybeans by weight. |
