PURPOSE: A yoke elevation manipulating apparatus for a mixer for confectionary and bakery is provided to facilitate and make soft manipulation of elevation while improving an elevation manipulating structure of a yoke and to execute mixing operation as random descent of the elevated yoke is prevented. CONSTITUTION: A yoke elevation manipulating apparatus (100) comprises a yoke which is fixed and supported; a bracket in which an elevation manipulating hole in the back; an elevation plate (110) which is installed on an open wall (116) in front of a pillar part of gas to allow elevation; a fixing end section which is penetrated and installed on side walls of the pillar part to enable rotating manipulation; an elevation manipulation lever (120) which is formed being bent to have a handle (124) at the other end; a circulation support piece which is fixed and supported by a fixing pin to be manipulated rotating with one end at a fixing end penetrated and installed inward of the pillar part and in which a penetrating hole is formed at the other end; an elevation manipulating rod (140) which fixes and supports with a pin axis in a part penetrated and installed to an upper part of the bracket while the elevating manipulating rode is elastically installed preventing breakaway a spring to a breakaway preventing hole in a part which is installed to be penetrated through a lower part of the bracket; and a couple of the tension springs (150) to facilitate inducing an elevation operation of the elevation plate when the elevation of the manipulating lever being installed between a partition wall in the pillar part for the back and gas of the elevation plate.
