Brine bath comprises a sulfiting agent, a calcium salt, an inorganic base to adjust the pH of the bath to 2-3, water and further a trace element such as zinc. Independent claims are included for: (1) preserving fruit to be preserved, semi-preserved, frozen and/or flavored comprising (a) immersing the freshly harvested fruits in the brine bath, (b) keeping the fruit immersed for a specified time, and (c) separating the fruits from the brine bath and rinse with cold water to remove the superficial salt layer; and (2) the fruit to be preserved, semi-preserved, frozen or (non)flavored obtained by the above method. |
