PROBLEM TO BE SOLVED: To provide a high-strength tannin adhesive which can be used without causing the generation of a detrimental volatile substance, a woody composite material using the tannin adhesive with good practical strength, and a method for producing the woody composite material. SOLUTION: The tannin adhesive contains tannin and a tertiary amine and the pH of an aqueous solution of the adhesive is greater than 7 and 13 or less. When<SP>13</SP>C-NMR of the hardened product of the tannin adhesive is measured under conditions where peak intensity observed at 150 to 160 ppm is determined to be 100, peak intensity observed at 140 to 150 ppm is 70 or less and/or peak intensity observed at 35 to 50 ppm is 25 or less.
