<p>The present invention relates to a method for producing an instant coffee, the method comprising: providing a finely ground roasted coffee material; providing an aqueous coffee extract; mixing the finely ground roasted coffee material with the aqueous coffee extract to form a first mixture; and drying the first mixture, wherein, before drying, the finely ground roasted coffee material: (i) is heated to a temperature of from 70 to 100° C. in an aqueous environment; or (ii) is maintained at a temperature of from 5 to 70° C. in an aqueous environment for a duration of at least 1 hour.</p> |
