The invention relates to food and pharmaceutical industry, namely to production of food powdered colorants of plant raw material. A method for producing beet-and-lemon antioxidant colorant includes sorting, washing, shredding and mixing of plant components, drying raw material and shredding the dried product. Betanin is stabilized and stored by adding unpared lemon pieces to raw beetroot preliminary shredded as chips in the ration 3:1 (three part of beetroot and one part of lemon), at that pH of the mixture of beet and lemon makes 3.5-4.2. Drying the obtained mixture is performed by convective method in two stages, at the first stage drying is carried out under the temperature of heat carrier 100-110 °C during 40-60 min., and at the second stage – under the temperature 60-65 °C to moisture 6-8 %. |
