摘要 PURPOSE: Cold noodles using pear and dongchimi(radish water kimchi), and a producing method thereof are provided to use large amount of pear for offering different taste from conventional cold noodle dish. CONSTITUTION: A producing method of Cold noodles using pear and dongchimi(radish water kimchi) comprises the following steps: soaking brisket in cold water for removing blood; boiling the brisket with spring onion, garlic, and whole black pepper; wrapping the cooked brisket with a cotton cloth before slicing, and removing oil from the obtained brisket stock before cooking; finely slicing radish from the dongchimi, and seasoning the radish slices with salt, sugar, and vinegar; cutting the pear in half, and finely slicing into a half-moon shape; separating egg whites from egg yolks, and pan-frying each parts before cutting; mixing the cold brisket stock and the dongchimi, and seasoning the mixture; boiling noodles before rinsing with cold water; and inserting the noodles, the stock mixture, the pear slices, the brisket slices, the fried eggs, and pine nuts in a bowl.
