摘要

FIELD: food industry.SUBSTANCE: invention relates to food products manufacture and refers to amino acid offal biocomposite production. The method envisages suspension production from offal mixed with water in a mechanic-and-acoustic homogeniser, proteolytic enzymes introduction into the suspension and subsequent hydrolysis at a temperature of 45-55°C during 5-6 hours. The produced biocomposite contains protein in an amount up to 16% with an indispensable amino acids complex in an amount of 11.4%.EFFECT: invention allows to compensate for deficit of protein in people's alimentation due to offal involvement into food production.1 tbl
