A dry pre-cooked soup mix, which disperses readily in hot or cold water without lump formation, is prepared by moistening a dry soup powder with water in order to cause the particles to aggregate and then removing the excess water without breaking up the aggregates to give a free-flowing granular material containing less than 7 1/2 % of moisture. Milk powder is preferably mixed in before the moistening and, in order to assist in the conversion of the lactose to a -lactose monohydrate, a small amount of this material is added. Potato, pea, mushroom, bean, tomato, or cooked poultry powder and a stabilizer starch may be added. Reference has been directed by the Comptroller to Specification 793,118. |
