PURPOSE: A method for manufacturing miscellaneous cereal vinegar using calcium phosphate mixed with fungi is provided to enhance absorption rate of the calcium phosphate, and to digest essential components for child growth. CONSTITUTION: A method for manufacturing vinegar using calcium phosphate mixed with fungi comprises: a step of washing and soaking miscellaneous cereal(100) including 70% of rice, 15% of hog millet, and 15% of sorghum; a step of steaming the miscellaneous cereal; a step of cooling the miscellaneous cereal and mixing calcium phosphate(200) containing a strain, and yeast(300) for alcohol fermentation; a step of adding the prepared ingredients and water in a fermentation container, and fermenting at pH 4.0 and room temperature for 2 weeks; a step of maturing to proliferate acetobacter at room temperature for 2 months; a step of maturing at room temperature for 4 months; and a step of filtering the matured material and extracting vinegar.
