PURPOSE: A method of manufacturing ice cream using hordei fructus germinatus is provided to use hordei fructus germinatus instead of sweeteners including sugar, fructose and the like. CONSTITUTION: A method of manufacturing ice cream using hordei fructus germinatus comprises the following steps: obtaining saccharified liquid by mixing 25-30 parts by weight of one or more selected from alpha-powder and alpha glutinous rice powder with 100 parts by weight of malt extract and saccharifying at 60-65 deg. Celsius for 4-5 hours; adding 5-20 parts by weight of saccharified liquid, 8-15 parts by weight of skimmed milk powder, 5-10 parts by weight of milk cream, 0.2-0.3 parts by weight of emulsifier, 0.2-0.3 parts by weight of stabilizer and 10-30 parts by weight of refining water to 100 parts by weight of crude oil, stirring the same and obtaining a saccharified mixture; sterilizing the saccarified mixture at 85-90 deg. Celsius for 5-6 minutes, cooling down to 4 deg. Celsius or less and obtaining a cooling mix; adding 0.5-2 parts by weight of fruit concentrated liquid, 0.1-0.3 part by weight of perfume to cooled mix, adding the same to a refrigerator, forming an ice crystal and obtaining semi-fluidal mix; and filling the mix into a mold or a container and freezing the same. The fruit concentrated liquid is one or more selected from citrus junos concentrate liquid, lemon concentrate liquid and lyme concentrated liquid. The malt extract is 5-10 times malt and obtained by dipping the malt into refining water with a temperature of 65-70 deg. Celsius for 30 minutes to 1 hour. |
