NOVEL CINNAMOYL ESTERASE FROM LACTOBACILLUS HELVETICUS

PURPOSE: Cinnamoyl esterase is provided to convert chlorogenic acid into caffeic acid and to produce an antioxidant containing the caffeic acid. CONSTITUTION: Lactobacillus helveticus-derived cinnamoyl esterase contains a polypeptide containing an amino acid sequence in sequence number 3. Cinnamoyl esterase is encoded by a polynucleotide sequence in sequence number 4. An expression vector contains the polynucleotide in sequence number 4. A transformant is prepared by the expression vector. A method for purifying the recombinant polypeptide comprises: a step of culturing the transformant; and a step of collecting the recombinant polypeptide from the transformant or a cultured medium thereof.
