PURPOSE: A method of manufacturing jujube slice is provided to have a crispy texture, improve storage, and to preserve nutrients. CONSTITUTION: Jujube is sliced to a thickness of 2-3 mm after washing. The sliced jujube is put into a freezing dryer and is freeze-dried. A freeze-drying is performed as follow. A temperature is decreased to -35~-45°C for 2-4 hours while the pressure of the freeze dryer is maintained at 4-6 Torr. The temperature of the freeze dryer is increased to -18~-22°C for 2-4 hours and is further increased to -2-2°C for 2-4 hours. The temperature of the freeze dryer is increased to 13-17°C for 2-4 hours and is further increased to 28-32°C for 2-4 hours. |
